The operations team also introduces new menu items through product sampling, explains changes driven by government regulations or product updates and invites feedback before implementation. Students see their suggestions reflected in future menus, creating a genuine sense of ownership and participation.

Local sourcing and farm-to-school initiatives connect students with the people and farms that produce their food. Maschio’s has built strong relationships with producers across New Jersey, Pennsylvania, Florida and Maryland, bringing locally grown fruits and vegetables directly into school meal programs. The partnership dedicates acreage specifically to growing produce for its school meal programs. The approach reflects its goal of maintaining sustainability, reliability and quality.
Students also meet local producers and understand the journey food takes before reaching their trays, strengthening appreciation for both nutrition and community partnerships. In some areas, students rarely encounter certain types of produce. Discovering that the food comes from a farm only a short distance from their school can make the experience especially memorable.
These events transform ordinary lunch periods into learning opportunities. Fresh produce becomes part of broader conversations about agriculture, sustainability and community support. Students can taste the produce, take a bag home and tell their families where it came from, extending the experience beyond the school.
Meeting the needs of school communities also means addressing requirements that extend beyond everyday menu planning. Maschio’s registered dietitians develop specialized menus for students with food allergies and other medical conditions, helping schools provide meals that account for individual dietary needs.
Serving Communities When They Needed It Most
A substantial support network powers Maschio's successful cafeteria operation and offerings. Operations teams coordinate logistics, chefs develop recipes and menu innovations, dietitians ensure nutritional compliance and administrative teams help schools navigate financial and operational complexities.
When major changes to the National School Lunch Program were introduced, many service providers had not yet developed products capable of meeting the new nutritional requirements. Manufacturers and suppliers were still working to understand what products would satisfy the requirements, making the effort a team exercise across the supply chain. Maschio's worked closely with vendors, manufacturers, brokers, chefs, dietitians and operations teams to identify products that satisfied compliance standards and student expectations.
This collaborative approach continues even today. Long-standing supplier relationships allow Maschio's to communicate openly about evolving nutritional standards and ensure products remain cost-effective, high-quality and appealing to students. It also participates in green and recycling committees, extending its involvement beyond the cafeteria to broader sustainability efforts within the communities.

Although Maschio’s traditionally operated within individual school kitchens, it transformed its office training room into a meal preparation facility in a single weekend, preparing meals for more than 100,000 students. It deployed 21 vehicles to deliver meals across New Jersey and Pennsylvania, ensuring students continued to receive food while learning from home. By proactively stepping in during an uncertain time, Maschio’s strengthened its role as a trusted community partner.

This commitment is reflected in Maschio's strong staff retention. The company currently employs nearly 4,000 people across four states, with women making up the vast majority of its workforce.
